Prepare the Quinoa
Rinse the quinoa under cold water and drain well. In a medium pot, combine the quinoa and vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes or until the quinoa is fluffy and the liquid has been absorbed. Set aside.

Sauté the Vegetables
In a large skillet or paella pan, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Then, add the diced bell pepper and mushrooms, and cook for 5-7 minutes until softened.

Add the Sofrito and Kale
Stir in the sofrito and chopped kale, cooking for another 3-5 minutes until the kale wilts.

Combine Everything
Add the cooked quinoa to the skillet and stir well to combine. Season with salt and black pepper to taste. Cook for another 2-3 minutes to heat through.

Serve
Divide the quinoa paella among plates and top each serving with a fried egg. Serve hot.
