Prepare the Cream Mixture
In a saucepan, heat the heavy cream over medium heat until it begins to steam. Do not let it boil.

Add Matcha
Whisk in the matcha green tea powder until completely dissolved and smooth.

Mix Egg Yolks
In a separate bowl, whisk together the egg yolks, granulated sugar, and vanilla extract until well combined and slightly thickened.

Combine Mixtures
Gradually pour the warm cream mixture into the egg yolk mixture, whisking constantly to prevent curdling.

Strain the Mixture
Strain the mixture through a fine-mesh sieve into a large measuring cup or bowl to remove any lumps.

Pour into Ramekins
Divide the mixture evenly among six ramekins.

Cool
Remove the ramekins from the water bath and let cool to room temperature. Refrigerate for at least 2 hours or overnight.

Caramelize the Sugar
Before serving, sprinkle a thin layer of additional granulated sugar over the top of each custard. Use a kitchen torch to caramelize the sugar until it forms a crispy top.

Garnish with fresh berries and serve immediately.
