Lemon Curd

    Prepare the Lemon Curd

    In a saucepan, combine lemon juice, lemon zest, and sugar over medium heat. Stir until the sugar dissolves.

    Add Eggs

    Whisk the eggs in a separate bowl, then slowly add to the lemon mixture, whisking continuously to prevent curdling.

    Thicken the Curd

    Continue to cook, stirring constantly, until the mixture thickens enough to coat the back of a spoon.

    Finish with Butter

    Remove from heat and stir in the butter until fully melted and incorporated. Let cool.

Cream Cheese Ice Cream

    Mix Ingredients

    In a bowl, beat the cream cheese until smooth. Slowly add the heavy cream, sweetened condensed milk, and vanilla extract, blending until creamy.

    Chill and Freeze

    Transfer the mixture to an ice cream maker and freeze according to the manufacturer's instructions, or pour into a container and freeze for at least 4 hours, stirring every hour.

    In a saucepan, combine water and sugar. Heat until the sugar dissolves to make a simple syrup.

    Dip the mint leaves in the simple syrup and place on a parchment-lined baking sheet. Allow to dry for several hours or until hardened.
