    Prepare the Base

    In a saucepan, combine the whole milk, heavy cream, and half of the sugar. Heat over medium heat until just below boiling, stirring occasionally.

    Whisk Egg Yolks

    In a bowl, whisk together the egg yolks and the remaining sugar until the mixture is pale and thick.

    Temper the Egg Yolks

    Slowly pour the hot milk mixture into the egg yolks while whisking constantly to prevent curdling.

    Cook the Mixture

    Return the mixture to the saucepan and cook over low heat, stirring constantly, until it thickens enough to coat the back of a spoon.

    Chill the Base

    Remove from heat and stir in vanilla extract. Allow the mixture to cool to room temperature, then refrigerate for at least 4 hours or overnight.

    Churn the Gelato

    Once chilled, pour the mixture into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency.

    Transfer the gelato to an airtight container and freeze for at least 2 hours before serving.
