Prepare the Batter
In a mixing bowl, combine all-purpose flour, cornstarch, baking powder, sugar, and salt. Gradually add cold water while whisking until the batter is smooth and free of lumps.

Prepare the Bananas
Peel the bananas and cut them in half lengthwise or into thick slices, depending on your preference.

Heat the Oil
In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Bananas
Dip each banana piece into the batter, allowing excess batter to drip off. Carefully place the battered banana into the hot oil and fry until golden brown, about 2-3 minutes per side. Remove and drain on paper towels.

Serve
Plate the fried bananas and top each serving with a scoop of coconut ice cream. Garnish with shredded coconut and serve immediately.
