    Prepare the Coffee Rub

    In a small bowl, combine the ground coffee, salt, and black pepper. Rub the mixture onto both sides of the filet mignon steaks.

    Sear the Filet Mignon

    In a skillet over medium-high heat, add 1 tablespoon of olive oil. Once hot, add the filet mignon steaks and sear for about 4-5 minutes on each side for medium-rare. Remove from heat and let rest.

    Caramelize the Cipollini Onions

    In the same skillet, add the cipollini onions and 1 tablespoon of olive oil. Sauté over medium heat until they are golden and tender, about 8-10 minutes. Remove and set aside.

    Blanch the Asparagus

    Bring a pot of salted water to a boil. Add the asparagus and cook for 2-3 minutes until bright green and tender-crisp. Drain and immediately place in ice water to stop cooking. Drain again before serving.

    Prepare the Wine Reduction

    In the same skillet, add the red wine and bring to a boil. Let it simmer for about 5-7 minutes until reduced by half. Stir frequently to avoid burning.

    Prepare the Potatoes

    Boil the potatoes until tender, about 15-20 minutes. Drain, then smash or mash them with a fork. Season with salt and pepper to taste.

    Serve

    On a plate, place a serving of smashed potatoes, top with the filet mignon, add the caramelized cipollini onions and blanched asparagus, and drizzle with the wine reduction.
