Prepare the Zucchini

Slice the zucchini into thin rounds and lightly season with salt and pepper.

Sauté the Zucchini

In a skillet, heat olive oil over medium heat. Add the zucchini slices and sauté until they are tender and slightly golden, about 5-7 minutes. Remove from heat and set aside.

Prepare the Piquillo Peppers

If using whole piquillo peppers, slice them into strips. If using jarred peppers, simply drain and set aside.

Assemble the Tower

On a serving plate, start with a layer of mixed greens, followed by a layer of sautéed zucchini, a layer of goat cheese, and then a layer of piquillo peppers. Repeat the layers until all ingredients are used, finishing with a final layer of goat cheese.

Drizzle with Balsamic

Drizzle balsamic vinegar over the top of the tower and finish with a sprinkle of salt and pepper to taste.
