1. Prepare the Pork

In a large pot, place the pork shoulder and cover it with water. Bring to a boil, then reduce the heat and simmer for about 2 hours or until the pork is tender. Remove the pork from the pot and shred it using two forks.

2. Make the Adobo Sauce

In a blender, combine the adobo sauce with a little water to thin it out if necessary. Add salt and pepper to taste.

3. Combine Pork and Sauce

In a large skillet over medium heat, combine the shredded pork with the adobo sauce. Cook for about 10 minutes, stirring occasionally, until the pork is well coated and heated through.

4. Prepare Spicy Yogurt

In a bowl, mix the plain yogurt with lime juice and a pinch of salt. Adjust seasoning as necessary.

5. Serve

To serve, warm the corn tortillas in a dry skillet or microwave. Fill each tortilla with adobo pork, top with spicy yogurt, sliced red bell peppers, and chopped cilantro. Squeeze lime juice over the top before serving.
