For the Banana-Chocolate Chip Muffins

Method

Directions

  1. 1

    Prepare the Oven

Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.

  2. 2

    Make the Muffin Batter

In a large bowl, mash the ripe bananas. Add the granulated sugar, brown sugar, eggs, vanilla extract, and applesauce. Mix until well combined.

  3. 3

    Combine Dry Ingredients

In a separate bowl, whisk together the gluten-free flour, baking powder, baking soda, and salt.

  4. 4

    Mix Together

Gradually add the dry ingredients to the banana mixture, stirring until just combined. Fold in the chocolate chips.

  5. 5

    Prepare Streusel Topping

In a small bowl, combine the chopped pecans, gluten-free flour, brown sugar, and cinnamon. Melt the butter and mix it into the dry ingredients until crumbly.

  6. 6

    Fill Muffin Tin

Divide the muffin batter evenly among the prepared muffin cups. Sprinkle the pecan streusel topping over each muffin.

  7. 7

    Bake

Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center comes out clean.

  8. 8

    Serve

Allow the muffins to cool slightly before drizzling with caramel and serving with whipped butter.
