    Prepare the Ingredients

    Wash and chop the spinach, slice the mushrooms, and shred the alpine cheese. Prepare the fresh herbs by chopping them finely.

    Cook the Potatoes

    In a skillet, heat 1 tablespoon of olive oil or butter over medium heat. Add diced crispy potatoes (about 1 cup) and cook until golden brown and crispy, about 10 minutes. Season with salt and pepper. Remove from the skillet and set aside.

    Sauté the Vegetables

    In the same skillet, add another tablespoon of olive oil or butter. Sauté the mushrooms until they are tender, about 5 minutes. Add the chopped spinach and cook until wilted, about 2 minutes. Season with salt and pepper.

    Make the Omelette

    In a bowl, whisk together the eggs, salt, and pepper. Pour the egg mixture into the skillet over the sautéed vegetables. Cook on medium-low heat until the edges start to set.

    Add Cheese and Herbs

    Sprinkle the shredded alpine cheese and chopped herbs over one half of the omelette. Once the eggs are mostly set, fold the omelette in half and let it cook for another minute until the cheese is melted.

    Serve

    Slide the omelette onto a plate, top with crispy potatoes, and garnish with additional herbs if desired. Serve hot.
