Preparation

  1. 1

    Prepare the Broth

In a large pot, combine the chicken or vegetable broth, lime leaves, lemongrass, galangal, shallots, fresh chili, tomato, and mushrooms. Bring to a boil, then reduce heat and simmer for about 15 minutes to allow the flavors to meld.

  2. 2

    Cook the Protein

Add the sliced chicken (or your choice of protein) to the broth and cook until the chicken is fully cooked, about 5-7 minutes.

  3. 3

    Cook the Noodles

In a separate pot, cook the rice noodles or egg noodles according to package instructions. Drain and set aside.

  4. 4

    Combine and Serve

Add the cooked noodles to the broth and stir to combine. Serve hot, garnished with bean sprouts, fresh cilantro, and lime wedges.
