In a large pot, combine the chicken or vegetable broth, lime leaves, lemongrass, galangal, shallots, fresh chili, tomato, and mushrooms. Bring to a boil, then reduce heat and simmer for about 15 minutes to allow the flavors to meld.

Add the sliced chicken (or your choice of protein) to the broth and cook until the chicken is fully cooked, about 5-7 minutes.
