Preparation

    Cook the noodles

    Bring a large pot of water to a boil. Add the rice noodles and cook according to package instructions until al dente. Drain and set aside.

    Prepare the sauce

    In a small bowl, mix together soy sauce, oyster sauce, sugar, minced garlic, and black pepper.

Stir Fry

    Cook the protein

    Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the sliced chicken (or your choice of protein) and stir-fry until cooked through. Remove from the pan and set aside.

    Stir-fry the vegetables

    In the same pan, add the remaining tablespoon of vegetable oil. Add the broccoli florets and sliced green bell pepper. Stir-fry for about 3-4 minutes until they are tender-crisp.

    Combine everything

    Push the vegetables to one side of the pan. Add the cooked noodles, protein, and sauce to the other side. Scramble the eggs in the empty space until fully cooked, then mix everything together.

Serve

    Plate and enjoy

    Serve hot, garnished with additional black pepper or chili flakes if desired.
