1. Cook the Beef
In a pot, heat a bit of oil over medium heat and add the chopped onion and minced garlic. Sauté until softened.
2. Add Curry Paste
Stir in the Masaman curry paste and cook for 2-3 minutes until fragrant.
3. Add Ingredients
Add the beef cubes and cook until browned. Then add coconut milk, water, fish sauce, brown sugar, and lime juice.
4. Simmer
Bring to a boil, then reduce heat and simmer for about 30 minutes until the beef is tender.
5. Add Sweet Potatoes and Peanuts
Add the diced sweet potatoes and crushed peanuts to the curry, then simmer for another 15 minutes.
Deep Fried Spring Rolls
6. Prepare Filling
In a bowl, mix shredded cabbage, grated carrots, finely chopped onion, and soy sauce.
7. Roll Spring Rolls
Take a spring roll wrapper, place a small amount of filling at the bottom, fold in the sides, and roll tightly. Seal with a bit of water.
8. Fry Spring Rolls
Heat oil in a deep pan over medium-high heat. Fry the spring rolls in batches until golden brown and crispy. Drain on paper towels.
