Prepare the Protein
If using chicken, beef, or pork, slice it thinly. For tofu, cut it into cubes.
Cooking the Soup

Sauté Aromatics
In a large pot, heat a little oil over medium heat. Sauté the sliced shallots until translucent.

Add Curry Paste
Stir in the red curry paste and cook for 1-2 minutes until fragrant.

Add Broth and Coconut Milk
Pour in the vegetable or chicken broth and coconut milk. Bring to a simmer.

Cook the Protein
Add your choice of protein to the pot, cooking until fully cooked through (about 5-7 minutes).

Combine Noodles and Vegetables
Add the cooked egg noodles, lettuce, and sliced green onions to the pot. Stir to combine and heat through.

Ladle the soup into bowls and top with fresh chili slices. Enjoy hot!
