    Prepare the Vegetables

    Wash and chop all the vegetables into bite-sized pieces. Set aside.

    Prepare the Aromatics

    Finely chop the onion, mince the garlic cloves, and grate the ginger. Set aside.

Cooking

    Heat the Oil

    In a large pot or pan, heat the vegetable oil over medium heat.

    Sauté Aromatics

    Add the chopped onion, garlic, and ginger to the pot. Sauté for about 5 minutes until the onion is translucent.

    Add Spices

    Stir in the cumin seeds, turmeric powder, coriander powder, and cayenne pepper. Cook for 2 minutes until fragrant.

    Incorporate Vegetables

    Add the cauliflower, bell peppers, carrots, green beans, and potato to the pot. Stir well to coat the vegetables with the spices.

    Add Tomato Sauce and Water

    Pour in the tomato sauce and water. Stir again to mix everything together.

    Simmer

    Bring the mixture to a boil, then reduce the heat to low. Cover the pot and let it simmer for about 20 minutes, or until the vegetables are tender.

    Finish with Garam Masala

    Once the vegetables are cooked, stir in the garam masala and salt to taste. Cook for another 2-3 minutes.

    Serve the Vegetable Vindaloo hot, garnished with fresh cilantro if desired. It pairs well with rice or naan.
