Preparation
1. Prepare the Vegetables
Wash and dice the bell peppers, eggplant, tomatoes, and potatoes into small cubes.
2. Prepare the Garlic
Mince the garlic cloves.
Cooking
3. Sauté the Meat
In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the ground meat and cook until browned. Remove from the skillet and set aside.
4. Cook the Garlic
In the same skillet, add another tablespoon of olive oil. Add the minced garlic and sauté for 1 minute until fragrant.
5. Add the Vegetables
Add the diced bell peppers, eggplant, potatoes, and tomatoes to the skillet. Stir well and cook for about 10 minutes until the vegetables are tender.
6. Combine Meat and Season
Return the cooked ground meat to the skillet. Add the dried basil, salt, and black pepper. Stir to combine everything and cook for an additional 5 minutes.

7. Serve the Ratatouille
