    Prepare the Vegetables

    Peel and chop the potatoes and carrots into small cubes. Cut the cauliflower into small florets and chop the bell pepper into bite-sized pieces. Rinse the green peas if using fresh.

    Chop the Onion

    Finely chop the onion and set aside.

Cooking

    Heat Oil

    In a large pot, heat the vegetable oil over medium heat.

    Sauté Onion

    Add the chopped onion to the heated oil and sauté until they turn translucent.

    Add Ginger-Garlic Paste

    Stir in the ginger-garlic paste and sauté for another minute until fragrant.

    Add Ajwain and Spices

    Add the ajwain, turmeric powder, red chili powder, coriander powder, and salt to the pot. Stir well to combine and cook for about 2 minutes to release the flavors.

    Add Vegetables

    Add the prepared potatoes, carrots, cauliflower, bell pepper, and green peas to the pot. Stir well to coat the vegetables with the spice mixture.

    Add Water

    Pour in the water, bring the mixture to a boil, then reduce the heat to low. Cover the pot and let it simmer for 15-20 minutes, or until the vegetables are tender.

    Finish with Garam Masala

    Once the vegetables are cooked, stir in the garam masala and adjust the seasoning if necessary. Cook for an additional 2 minutes.

    Garnish and Serve

    Garnish with fresh cilantro before serving hot with rice or bread.
