    Chop the Vegetables

    Chop the carrot, green beans, potato, cauliflower, and prepare peas. Set aside.

    Prepare the Coconut Sauce

    Dice the onion, mince the garlic, and grate the ginger. Set these aside for later use.

Cooking

    Cook the Vegetables

    In a large pot, add the chopped vegetables (carrot, green beans, potato, cauliflower, peas) and sauté for about 5 minutes until they start to soften.

    Make the Coconut Sauce

    Add the diced onion, minced garlic, and grated ginger to the pot and sauté for another 3-4 minutes until the onions are translucent.

    Add Spices

    Stir in the turmeric powder, coriander powder, and salt, mixing well to coat the vegetables.

    Add Coconut Milk and Broth

    Pour in the coconut milk and vegetable broth, stirring to combine. Bring the mixture to a simmer and cook for 10-15 minutes, or until the vegetables are tender.

Tempering

    Temper the Curry

    In a small pan, heat the oil over medium heat. Add mustard seeds and let them splutter. Then add curry leaves and fry for a few seconds.

    Combine Tempering with Curry

    Pour the tempering over the curry and stir well. Allow it to simmer for an additional 5 minutes.

Serving

    Serve the Curry

    Remove from heat and serve the Taj Vegetable Curry hot with rice or naan.
