Prepare the Cheese Dumplings

Mix Ingredients

In a mixing bowl, combine the ricotta cheese, all-purpose flour, baking powder, cardamom powder, sugar, and milk. Mix until a soft dough forms.

Shape Dumplings

Wet your hands with water and take small portions of the dough, rolling them into small balls (about 1 inch in diameter).

Boil Dumplings

In a large pot, bring water to a gentle boil. Carefully drop the dumplings into the boiling water. Cook for about 10 minutes or until they puff up and float to the top. Remove them with a slotted spoon and set aside.

Prepare the Saffron Milk

Heat Milk

In a saucepan, heat the whole milk over medium heat until it begins to simmer. Do not let it boil.

Add Sugar and Saffron

Stir in the sugar and saffron strands. Continue to simmer for about 5 minutes, allowing the saffron to infuse the milk with its color and flavor.

Finish the Milk

Remove the saucepan from heat and add the rose water. Allow the milk to cool slightly.

Assemble the Rasmali

Combine Dumplings and Milk

In a serving dish, arrange the cheese dumplings and pour the warm saffron milk over them, ensuring they are completely submerged.

Garnish

Sprinkle the chopped pistachios on top for garnish.

Serve

Allow the rasmali to soak for at least 30 minutes before serving. Enjoy chilled or at room temperature.
