Prepare the Flatbread

    Make the Dough

    In a mixing bowl, combine the all-purpose flour and salt. Gradually add water and mix until a soft dough forms. Knead in the oil until smooth. Cover the dough with a damp cloth and let it rest for 30 minutes.

    Roll the Dough

    After resting, divide the dough into equal portions and roll each portion into a thin circle using a rolling pin. Heat a skillet over medium heat and cook each flatbread for about 1-2 minutes on each side until golden brown.

Prepare the Filling

    Cook the Vegetables

    Finely chop the onion and tomato. In a skillet, heat 1 tablespoon of oil over medium heat. Add the chopped onion and sauté until translucent. Add the chopped tomato, salt, and black pepper, cooking until the tomato softens.

    Scramble the Eggs

    In a bowl, beat the eggs. Pour the beaten eggs into the skillet with the cooked onions and tomatoes. Stir gently and cook until the eggs are just set. Remove from heat.

Assemble the Kathi Roll

    Layer and Roll

    Take a cooked flatbread, spread a generous spoonful of yogurt and chutney on top. Add a portion of the egg filling and sprinkle with fresh cilantro. Roll the flatbread tightly, enclosing the filling.

    Serve

    Cut the Kathi Roll in half and serve warm with extra chutney on the side.
