In a large bowl, combine the chicken breasts, soy sauce, minced garlic, grated ginger, salt, and black pepper. Mix well and marinate for at least 30 minutes.

In a separate bowl, whisk together the cornstarch and egg until smooth. This will create the batter for frying.

Batter the Chicken
Take the marinated chicken pieces and dip each piece into the batter, ensuring they are well coated.

Fry the Chicken
Carefully place the battered chicken pieces into the hot oil, frying in batches to avoid overcrowding. Fry until golden brown and cooked through, about 6-8 minutes per batch. Use a slotted spoon to remove the chicken and drain on paper towels.

Make the Chili Sauce
In a small bowl, mix together the chili sauce, honey, rice vinegar, and sesame oil until well combined.

In a large skillet or wok, add the fried chicken and pour the chili sauce over it. Toss well to ensure all the chicken is coated in the sauce.
