Prepare the Chicken
Cut the boneless chicken breast into strips about 1 inch wide.

Make the Marinade
In a bowl, mix yogurt, ginger-garlic paste, turmeric powder, red chili powder, garam masala, salt, and lemon juice.

Marinate the Chicken
Add the chicken strips to the marinade, ensuring they are well coated. Cover and let marinate in the refrigerator for at least 1 hour, preferably overnight.

Prepare the Breading
In a bowl, combine all-purpose flour and cornstarch. In another bowl, whisk together the egg and water.

Coat the Chicken
Remove the marinated chicken from the refrigerator. Dip each strip into the flour mixture, then into the egg mixture, and finally back into the flour mixture for a double coating.
Frying

Heat the Oil
In a deep frying pan or wok, heat the oil over medium-high heat until it reaches 180°C (350°F).

Fry the Chicken
Carefully add the coated chicken strips to the hot oil, frying them in batches to avoid overcrowding. Fry for about 5-7 minutes or until golden brown and cooked through.

In the last minute of frying, add dried red chilies and curry leaves to the oil for flavor.

Drain and Season
Once cooked, remove the chicken from the oil and drain on paper towels. Sprinkle chaat masala over the hot chicken before serving.
