Marinate Chicken
In a large mixing bowl, combine the chicken drumettes, garlic powder, ginger powder, paprika, salt, black pepper, lemon juice, and olive oil. Mix well until the chicken is evenly coated. Cover the bowl and let it marinate in the refrigerator for at least 1 hour, or preferably overnight for maximum flavor.

Prepare Skewers
While the chicken is marinating, soak the wooden skewers in water for at least 30 minutes to prevent them from burning during frying.

Prepare Breading Station
In three separate shallow dishes, prepare the breading station. In the first dish, add the all-purpose flour. In the second dish, whisk together the eggs and milk until well combined. In the third dish, place the bread crumbs.

Bread the Chicken
Take each marinated chicken drumette, dip it into the flour, shaking off any excess. Then, dip it into the egg mixture, letting any excess drip off before finally coating it with bread crumbs. Place the breaded chicken on a plate and repeat until all drumettes are coated.

Fry the Chicken
In a large frying pan or deep pot, heat the vegetable oil over medium-high heat. Once the oil is hot (about 350°F or 175°C), carefully add the breaded chicken drumettes in batches. Fry for about 6-8 minutes or until golden brown and cooked through. Remove the chicken with a slotted spoon and place it on a paper towel-lined plate to drain excess oil.

Serve
Once all chicken lollipops are fried, insert a skewer into the thick end of each drumette to create a lollipop effect. Serve hot with your favorite dipping sauce.
