Prep the Okra

Wash the okra thoroughly, pat dry, and cut off the tops. Slice them into 1-inch pieces.

Chop the Vegetables

Finely chop the onions and tomatoes. Slit the green chilies lengthwise.

In a pan, heat 3 tablespoons of oil over medium heat.

Sauté Onions

Add the chopped onions to the pan and sauté until they turn golden brown.

Add Spices

Stir in turmeric powder, red chili powder, and coriander powder. Cook for 1-2 minutes.

Incorporate Tomatoes

Add the chopped tomatoes and green chilies to the pan. Cook until tomatoes soften.

Cook Okra

Add the sliced okra and salt to the mixture. Stir well and cook on medium heat for about 10-15 minutes, stirring occasionally to avoid sticking.

Finish with Garam Masala

Once the okra is cooked and tender, sprinkle garam masala over the dish and mix well. Cook for an additional 2 minutes.
