    Prepare the Vegetables

    Peel and cube the potatoes into bite-sized pieces. Cut the cauliflower into florets and rinse them under cold water.

    Chop the Onion

    Finely chop the large onion and set aside.

Cooking

    Heat the Oil

    In a large pan, heat 2 tablespoons of oil over medium heat.

    Sauté the Onion

    Add the chopped onion to the pan and sauté until they become golden brown, about 5-7 minutes.

    Add Ginger-Garlic Paste

    Stir in 1 tablespoon of ginger-garlic paste and cook for an additional 1-2 minutes until fragrant.

    Incorporate Spices

    Add cumin seeds, turmeric powder, coriander powder, red chili powder, and salt. Sauté for another 1 minute to release the flavors.

    Add Vegetables

    Add the cubed potatoes and cauliflower florets to the pan. Mix well to coat the vegetables with the spices.

    Cook the Vegetables

    Cover the pan and cook on low heat for about 20 minutes, stirring occasionally, until the potatoes and cauliflower are tender.

    Finish with Garam Masala

    Once the vegetables are cooked, sprinkle 1 teaspoon of garam masala over the top and gently mix. Cook for another 2 minutes.

    Garnish and Serve

    Remove from heat, garnish with fresh cilantro, and serve hot with rice or naan.
