Making the Cioppino

    Sauté the Aromatics

    In a large pot, heat olive oil over medium heat. Add chopped onion and bell pepper, and sauté until softened, about 5 minutes. Stir in minced garlic and cook for another minute.

    Add Tomatoes and Stock

    Stir in the diced tomatoes, fish stock (or clam juice), white wine, bay leaves, oregano, red pepper flakes, salt, and black pepper. Bring to a simmer and let cook for about 15 minutes.

    Add the Seafood

    Add the shrimp, scallops, mussels, clams, and crab meat to the pot. Cover and cook for about 5-7 minutes, or until the mussels and clams open and the shrimp and scallops are cooked through. Discard any unopened shells.

Preparing the Grilled Bread

    Grill the Bread

    Preheat a grill or grill pan over medium heat. Brush the baguette slices with olive oil and grill until toasted, about 2-3 minutes per side. Rub the cut side of the garlic clove on the toasted bread.

    Ladle the cioppino into bowls and serve hot with grilled bread on the side.
