Prepare the Ingredients

Chop the onion, garlic, carrots, celery, bell pepper, and zucchini into small, even pieces. Clean the clams and set aside.

Cooking

Sauté the Vegetables

In a large pot, heat some olive oil over medium heat. Add the chopped onion and garlic, and sauté until translucent. Add the carrots, celery, bell pepper, and zucchini, and cook for another 5 minutes.

Add the Broth

Pour in the fish stock and white wine. Stir in the tomato paste, bay leaves, thyme, salt, and black pepper. Bring to a simmer.

Add the Seafood

Add the clams and lobster tails to the pot. Cover and cook for about 8-10 minutes, until the clams open and the lobster is cooked through.

Finish with Scallops

Add the scallops and cook for an additional 3-5 minutes until they are opaque and cooked through. Remove from heat.

Grill the Bread

While the stew is cooking, slice the ciabatta bread and brush with olive oil. Grill on a pan or grill until golden brown on both sides.

Plate the Stew

Serve the Dalmation Stew hot, with the grilled bread on the side. Enjoy!
