Preparing the Fish
Prepare the Sand Dabs
Rinse the sand dab fillets under cold water and pat them dry with paper towels. Season both sides with salt and black pepper.
Coat the Fillets
Dredge each fillet in all-purpose flour, shaking off any excess flour.
Pan Fry the Fish
Heat the olive oil in a large skillet over medium-high heat. Once hot, add the sand dab fillets and cook for about 2-3 minutes on each side, or until golden brown and cooked through. Remove from the skillet and set aside.
Preparing the Sides
Cook the Brussels Sprouts
In the same skillet, add the Brussels sprouts and sauté for about 5-7 minutes until they are tender and slightly browned. Add minced garlic and sauté for another 1-2 minutes. Finish with a squeeze of lemon juice and a tablespoon of butter.
Prepare the French Fries
Cook the French fries according to package instructions until crispy. You can also make them from scratch by cutting potatoes into fries and frying them until golden.
Plating
Serve
On a plate, arrange the pan-fried sand dabs alongside the sautéed Brussels sprouts and crispy French fries. Enjoy your meal!
