Method

Pot Roast Preparation

    Sear the Roast

    Season the chuck roast with salt and black pepper. In a large skillet or Dutch oven, heat olive oil over medium-high heat. Sear the roast on all sides until browned, about 4-5 minutes per side.

    Sauté Vegetables

    Remove the roast and set aside. In the same pot, add the chopped onion, garlic, carrots, and celery. Sauté until softened, about 5 minutes.

    Combine Ingredients

    Return the roast to the pot. Add beef broth, bay leaves, thyme, and Worcestershire sauce. Bring to a simmer.

    Cook the Roast

    Cover and transfer to a preheated oven at 300°F (150°C). Cook for 3-4 hours, or until the roast is tender and easily pulls apart with a fork.

Mashed Potatoes Preparation

    Boil Potatoes

    In a large pot, add quartered potatoes and cover with water. Bring to a boil and cook until tender, about 15-20 minutes.

    Mash Potatoes

    Drain the potatoes and return them to the pot. Add butter, milk, salt, and black pepper. Mash until smooth and creamy.

Vegetable Preparation

    Sauté Green Beans

    In a skillet, heat olive oil over medium heat. Add green beans and sauté for about 5-7 minutes until tender-crisp. Season with salt and black pepper.
