Method

Cooking the Salmon

    Prepare the Marinade

    In a bowl, combine olive oil, mesquite seasoning, lemon juice, garlic powder, salt, and black pepper. Mix well.

    Marinate the Salmon

    Place the salmon fillets in a shallow dish and pour the marinade over them. Cover and refrigerate for at least 30 minutes.

    Preheat the Broiler

    Preheat your broiler to high heat.

    Broil the Salmon

    Remove the salmon from the marinade and place it on a broiler-safe pan. Broil for about 6-8 minutes or until the salmon is cooked through and flakes easily with a fork.

Cooking the Sides

    Prepare the Artichokes

    Trim the artichokes and steam them for about 25 minutes or until tender.

    Cook the French Fries

    Prepare french fries according to package instructions, either baking or frying until crispy.

    Sauté the Brussel Sprouts

    Trim and halve the brussel sprouts. In a skillet, melt butter and sauté minced garlic for 1 minute. Add the brussel sprouts and cook until tender and lightly browned, about 8-10 minutes.
