Preparing Filet Mignon

    Season the Steaks

    Pat the filet mignon steaks dry with paper towels. Rub them with olive oil, then season generously with salt and black pepper.

    Sear the Steaks

    Heat a cast-iron skillet over medium-high heat. Add the garlic cloves and rosemary to the skillet. Once hot, add the steaks and sear for about 4-5 minutes on each side for medium-rare, or until desired doneness.

    Rest the Steaks

    Remove the steaks from the skillet and let them rest for 5 minutes before serving.

Preparing Shoestring Potatoes

    Prepare the Potatoes

    Peel the russet potatoes and cut them into thin shoestrings. Soak in cold water for 30 minutes, then drain and pat dry.

    Fry the Potatoes

    Heat the vegetable oil in a deep-fryer or large pot to 350°F (175°C). Fry the potatoes in batches until golden brown and crispy, about 3-4 minutes per batch. Remove and drain on paper towels. Season with salt.

    In a saucepan, melt the butter over medium heat. Add the mixed vegetables and sauté for 5-7 minutes until tender. Season with salt and black pepper to taste.
