Preparation

  1. 1

    Prepare the French Fries

Heat vegetable oil in a deep fryer or large pot to 350°F (175°C). Add the cut potatoes and fry until golden brown, about 5-7 minutes. Remove fries and drain on paper towels. Season with salt to taste.

  2. 2

    Prepare the Sole

Preheat the broiler in your oven. In a small bowl, mix together olive oil, lemon juice, minced garlic, paprika, salt, and black pepper. Place the Petrale sole fillets on a broiler-safe pan and brush both sides with the olive oil mixture.

Cooking

  1. 3

    Broil the Fish

Place the pan with the sole fillets under the broiler. Broil for about 3-5 minutes on each side, or until the fish flakes easily with a fork and has a light golden color. Remove from the oven and sprinkle with fresh parsley.

Serving

  1. 4

    Plate and Serve

Serve the broiled Petrale sole alongside the French fries. Enjoy your meal!
