Cook the Bacon
In a large pot, cook the diced bacon over medium heat until crispy. Remove and set aside, leaving the fat in the pot.

Add Potatoes and Seasonings
Stir in the diced potatoes, thyme, bay leaf, salt, and pepper. Cook for a few minutes.

Add Clam Juice
Pour in the clam juice and bring to a boil. Reduce heat and simmer until potatoes are tender.

Add Clams and Cream
Stir in the chopped clams and heavy cream. Simmer for an additional 5-10 minutes.

Finish the Chowder
Remove the bay leaf, adjust seasoning if needed, and stir in the cooked bacon and fresh parsley. Serve hot.
