Preparation and Assembly

Prepare the Apples

Peel, core, and slice the apples into halves. Set aside.

Make the Caramel

In a large ovenproof skillet, melt the butter over medium heat. Add the sugar and stir until it dissolves and turns a light golden color.

Cook the Apples

Add the apple halves to the skillet, cut side up. Cook for about 10 minutes until they start to soften. Add vanilla extract and rosemary.

Add the Puff Pastry

Preheat the oven to 375°F (190°C). Roll out the puff pastry and place it over the apples, tucking the edges into the skillet.

Bake the Tarte Tatin

Bake in the preheated oven for 25-30 minutes, or until the pastry is golden brown. Remove from the oven and let it cool for 10 minutes.

Make the Rosemary Crème Fraîche

In a bowl, whisk together the heavy cream, chopped rosemary, and a pinch of salt until it thickens slightly.

Serve

Invert the tart onto a serving plate, slice, and serve warm with rosemary crème fraîche.
