Prepare the Potatoes
Preheat your oven to 425°F (220°C). Wash and peel the russet potatoes, then cut them into thin wedges. In a large bowl, toss the potato wedges with salt and black pepper.
Bake the Potatoes
Spread the seasoned potato wedges on a baking sheet in a single layer. Bake in the preheated oven for 25-30 minutes or until they are crispy and golden brown, flipping halfway through.
Layer the Nachos
Once the potatoes are baked, remove them from the oven and layer them on a serving platter. Start with a layer of potatoes, then top with ranch-style beans, pulled chicken (or pork/beef), and sprinkle the shredded Monterey Jack and Cheddar cheese generously over the top.
Melt the Cheese
Return the assembled nachos to the oven and bake for an additional 5-7 minutes or until the cheese has melted and is bubbly.
Serve
Remove from the oven and top with optional sour cream, fresh jalapeños, and guacamole as desired. Serve immediately.
