Preheat and Prep
Preheat your smoker to 250°F (121°C). Pat the chicken wings dry with paper towels.
Season the Wings
In a large bowl, combine the olive oil, salt, black pepper, garlic powder, onion powder, and paprika. Toss the chicken wings in the mixture until evenly coated.
Smoke the Wings
Place the seasoned wings in the smoker and smoke for about 1.5 to 2 hours, until they reach an internal temperature of 165°F (74°C).
Toss in Sauce
After smoking, toss the wings in your choice of gold sauce, chipotle hot sauce, or buffalo sauce until well coated.
Serve
Serve the wings hot with your favorite dipping sauces or sides.
