Prepare the Custard Base
In a medium saucepan, combine the whole milk, heavy cream, and half of the sugar. Heat over medium heat until the mixture is warm, stirring occasionally.

Cook the Custard
Cook the custard over medium-low heat, stirring constantly with a wooden spoon, until it thickens enough to coat the back of the spoon (around 170°F or 77°C). Do not boil.

Strain and Cool
Remove from heat and strain the custard through a fine-mesh sieve into a bowl to remove any cooked egg bits. Stir in the vanilla extract and a pinch of salt. Let it cool to room temperature, then refrigerate for at least 4 hours or overnight.

Churn the Custard
Once chilled, pour the custard into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency.

Freeze
Transfer the churned custard into an airtight container and freeze for at least 2 hours to firm up before serving.
