Prepare the Fruit Compote

In a small saucepan, combine mixed berries and sugar. Cook over medium heat until the berries break down and the mixture thickens slightly, about 5-7 minutes. Remove from heat and let cool.

In a small bowl, mix together peanut butter and maple syrup until well combined. If the mixture is too thick, you can microwave it for about 15-20 seconds to make it easier to drizzle.

Prepare the Waffle Pieces

Toast the waffles until golden brown and then cut them into bite-sized pieces.

In a mixing bowl, whip the heavy cream until soft peaks form. You can add a little sugar or vanilla extract if desired for sweetness.

In a serving bowl, scoop out the vanilla ice cream. Top with the warm peanut butter sauce, waffle pieces, and fruit compote. Finish with a generous dollop of whipped cream and a cherry on top.
