Directions
Preheat the Oven
Preheat your oven to 350°F (175°C).
Mix Dry Ingredients
In a bowl, whisk together the flour, baking soda, and salt. Set aside.
Cream Butter and Sugars
In a large mixing bowl, cream together the unsalted butter, brown sugar, and granulated sugar until light and fluffy.
Add Eggs and Vanilla
Beat in the eggs one at a time, then stir in the vanilla extract.
Combine Mixtures
Gradually add the dry ingredients to the wet mixture, mixing until just combined. Fold in the chocolate chips.
Scoop large portions of dough (about 1/4 cup each) onto a baking sheet lined with parchment paper, leaving space between each cookie.
Bake
Bake in the preheated oven for 12-15 minutes, or until the edges are golden brown. Let cool on the baking sheet for a few minutes before transferring to a wire rack.
Assemble Sandwiches
Once cookies are completely cool, scoop your choice of ice cream onto the flat side of one cookie and top with another cookie. Press gently to create a sandwich.
Serve
Serve immediately or freeze for a firmer sandwich.
