1. Prepare the Vegetables
In a mixing bowl, combine the grated carrot, grated zucchini, finely chopped onion, finely chopped bell pepper, and minced garlic. Mix well and set aside.

In another bowl, mash the drained chickpeas with a fork or potato masher until mostly smooth, leaving some chunks for texture.
3. Combine Ingredients
Add the cooked quinoa to the mashed chickpeas, followed by the prepared vegetables. Mix everything until well combined.

Stir in the breadcrumbs, chili powder, cumin, salt, and black pepper into the mixture. If using, beat the egg (or prepare flax egg) and add it to the mixture. Combine well to form a cohesive mixture.
Cooking

Using your hands, shape the mixture into patties (about 1/2 inch thick). You should get about 6-8 patties depending on the size.
6. Cook on the Stove
Heat olive oil in a skillet over medium heat. Once hot, carefully place the patties into the skillet, cooking in batches if necessary. Cook for about 4-5 minutes on each side, or until golden brown and crispy.
