Bread Preparation

Activate Yeast
In a small bowl, combine warm water (1.5 cups) and sugar (1 tbsp). Sprinkle active dry yeast (2 tsp) over the water and let it sit for about 5-10 minutes, until frothy.

Mix Dough
In a large mixing bowl, combine all-purpose flour (4 cups) and salt (1 tbsp). Make a well in the center and add the activated yeast mixture and olive oil (2 tbsp). Stir until a dough begins to form.

Knead Dough
Turn the dough onto a floured surface and knead for about 8-10 minutes until smooth and elastic. If the dough is sticky, add a little more flour as needed.

First Rise
Place the kneaded dough in a lightly greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1-2 hours, or until doubled in size.
Shaping and Baking

Shape the Bread
Once the dough has risen, punch it down to release the air. Divide the dough in half and shape each half into a loaf. Place the loaves on a baking sheet lined with parchment paper.

Second Rise
Cover the shaped loaves with a damp cloth and let them rise for another 30-45 minutes, until slightly puffy.

Preheat Oven
While the loaves are rising, preheat your oven to 375°F (190°C).

Prepare Topping
In a small bowl, mix grated Parmesan cheese (1 cup) and dried oregano (2 tbsp) together.

Bake the Bread
Place the baking sheet in the preheated oven and bake for 25-30 minutes, or until the bread is golden brown and sounds hollow when tapped on the bottom.

Remove the loaves from the oven and let them cool on a wire rack before slicing.
