    Prepare the Turkey

    Remove the turkey from the refrigerator and let it come to room temperature for about 30 minutes. Preheat your oven to 325°F (165°C).

    Clean and Season

    Remove the giblets and neck from the turkey cavity. Rinse the turkey thoroughly under cold water and pat dry with paper towels. Rub the turkey inside and out with olive oil, salt, and black pepper.

Herb Mixture

    Prepare the Herb Mixture

    Finely chop the rosemary, thyme, and sage. Mince the garlic cloves. Combine these herbs in a small bowl.

    Stuff the Turkey

    Gently loosen the skin over the breast and thighs of the turkey. Spread the herb mixture evenly under the skin and also inside the cavity of the turkey.

Vegetable Bed and Roasting

    Prepare the Vegetable Bed

    Chop the carrots, celery, and onion into large chunks. Place them in the bottom of a roasting pan.

    Roast the Turkey

    Place the turkey breast-side up on top of the vegetables in the roasting pan. Roast in the preheated oven for about 13-15 minutes per pound, or until the internal temperature reaches 165°F (74°C) in the thickest part of the thigh.

    Every 30 minutes, baste the turkey with the juices from the bottom of the pan to keep it moist.

    Once the turkey is cooked, remove it from the oven and let it rest for at least 20-30 minutes before carving. This helps the juices redistribute.
