Dough Preparation

Activate the Yeast
In a small bowl, combine warm water (110°F to 115°F), sugar, and yeast. Stir gently and let it sit for 5-10 minutes until frothy.

Mix the Dough
In a large mixing bowl, combine all-purpose flour and salt. Make a well in the center and add the activated yeast mixture and olive oil. Mix until a shaggy dough forms.

Knead the Dough
Turn the dough out onto a floured surface and knead for about 8-10 minutes until smooth and elastic.

First Rise
Place the kneaded dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.
Cheese Topping Preparation

Prepare Cheese Mixture
In a mixing bowl, combine Monterey Jack cheese, Cheddar cheese, Parmesan cheese, dried oregano, dried basil, garlic powder, salt, and black pepper. Mix well and set aside.
Baking the Bread

Shape the Dough
Once the dough has risen, punch it down and turn it out onto a floured surface. Shape it into a loaf or divide it into smaller rolls.

Second Rise
Place the shaped dough onto a baking sheet lined with parchment paper. Cover with a cloth and let it rise for another 30-45 minutes.

Preheat the Oven
Preheat your oven to 375°F (190°C).

Add Cheese Topping
Once the dough has risen, sprinkle the prepared cheese mixture generously over the top.

Bake
Bake in the preheated oven for about 25-30 minutes or until the bread is golden brown and sounds hollow when tapped on the bottom.

Remove from the oven and let it cool on a wire rack before slicing. Serve warm or at room temperature.
