Preparation of Vegetables

    Prepare the Vegetables

    Rinse and chop the cauliflower into small florets. Peel and slice the carrots into thin rounds. Remove the seeds and stem from the green bell pepper and dice it. Chop the celery into small pieces. Mince the garlic cloves and slice hot peppers.

    In a large mixing bowl, combine the cauliflower florets, sliced carrots, diced green bell pepper, chopped celery, minced garlic, and sliced hot peppers. Set aside.

Pickling Liquid Preparation

    Make the Pickling Liquid

    In a medium saucepan, combine the white vinegar, water, olive oil, sugar, salt, dried oregano, black peppercorns, and bay leaves. Stir well to combine.

    Heat the Mixture

    Place the saucepan over medium heat and bring the mixture to a simmer, stirring occasionally until the sugar and salt dissolve. Remove from heat.

Pickling Process

    Combine Vegetables and Pickling Liquid

    Pour the hot pickling liquid over the prepared vegetables in the mixing bowl. Ensure all vegetables are well submerged in the liquid.

    Allow the mixture to cool to room temperature. Once cooled, transfer the giardiniera to clean glass jars with lids. Seal tightly and refrigerate.
