Prepare the Dough
1. Activate Yeast
In a small bowl, combine the warm water, sugar, and yeast. Let it sit for about 5-10 minutes until frothy.

In a large mixing bowl, whisk together the all-purpose flour and salt until well combined.
3. Combine Mixtures
Add the activated yeast mixture and olive oil to the flour mixture. Stir until a rough dough forms.
4. Knead Dough
Transfer the dough onto a lightly floured surface and knead for about 5-7 minutes until smooth and elastic.
5. Let Dough Rise
Place the kneaded dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.
Bake the Flatbread

Preheat your oven to 475°F (245°C) and place a baking stone or baking sheet inside to heat.
7. Shape the Dough
Once the dough has risen, punch it down and divide it into 4 equal portions. Roll each portion into a flat circle about 1/4 inch thick.
8. Add Toppings
Brush the top of each flatbread with olive oil and sprinkle with fresh herbs and sea salt, if desired.
9. Bake
Carefully transfer the flatbreads onto the hot baking stone or sheet. Bake for 5-7 minutes, or until golden brown and puffed.
10. Cool and Serve
