    Prepare the Dry Rub

    In a bowl, combine brown sugar, paprika, black pepper, salt, garlic powder, onion powder, and chili powder. Mix well until all ingredients are evenly combined.

    Prepare the Ribs

    Remove the membrane from the back of the ribs. Pat them dry with paper towels. Rub the dry rub mixture generously over both sides of the ribs. Let the ribs sit at room temperature for about 30 minutes to absorb the flavors.

Cooking

    Preheat the Grill

    Preheat your grill to a medium-low heat (about 120°C or 250°F). If using charcoal, arrange the coals to create a two-zone fire.

    Cook the Ribs

    Place the ribs on the grill, bone side down. Close the lid and cook for about 2 to 2.5 hours, turning occasionally, until the meat is tender and pulls away from the bone.

    Add BBQ Sauce

    During the last 30 minutes of cooking, brush the BBQ sauce on the ribs. Close the lid and let the sauce caramelize.

Serving

    Remove the ribs from the grill and let them rest for about 10 minutes. Slice between the bones and serve with additional BBQ sauce, chopped cilantro, and lime wedges on the side.
