Prepare the Filling
In a large skillet, heat olive oil over medium heat. Add the diced onion and jalapeno, sautéing until softened, about 3-4 minutes.

Cook the Beef
Add the ground beef to the skillet and cook until browned. Drain any excess fat. Stir in taco seasoning, salt, and pepper, and cook for another 2 minutes.

Assemble the Quesadilla
In a separate skillet, place one tortilla and sprinkle half of the cheddar and Monterey Jack cheese on one half. Add a portion of the beef mixture, diced tomatoes, and then sprinkle the remaining cheese on top. Fold the tortilla over.

Cook the Quesadilla
Cook the quesadilla over medium heat for about 3-4 minutes on each side, or until golden brown and the cheese is melted. Repeat with the remaining tortillas.

Serve
Cut the quesadilla into wedges and serve hot with salsa or your favorite dipping sauce.
