Preheat the oven
Preheat your oven to 425°F (220°C).

Prepare the potatoes
Wash the russet potatoes and cut them into wedges. You can leave the skin on for added texture.

Season the wedges
In a large bowl, toss the potato wedges with olive oil, garlic powder, paprika, salt, and black pepper until they are well coated.

Bake the wedges
Spread the seasoned potato wedges in a single layer on a baking sheet. Bake in the preheated oven for 25-30 minutes, flipping halfway through, until they are golden brown and crispy.

Add cheese
Remove the wedges from the oven, sprinkle the cheddar cheese blend on top, and return to the oven for an additional 5-7 minutes, until the cheese is melted and bubbly.

Serve
Transfer the loaded potato wedges to a serving platter. Serve warm with sour cream on the side. Optionally, add cooked bacon or chili on top.
