    Prepare the Ingredients

    Gather all ingredients and chop the vegetables. Ensure the shrimp is peeled and deveined, and the chicken is diced.

    Sauté the Meats

    In a large pot or Dutch oven, heat the olive oil over medium heat. Add the Andouille sausage and cook until browned, about 5 minutes. Then add the diced chicken and cook until no longer pink, about 5-7 minutes.

    Add Vegetables and Garlic

    Stir in the chopped bell pepper, onion, and minced garlic. Cook until the vegetables are softened, about 3-4 minutes.

    Combine the Ingredients

    Add the canned diced tomatoes (with juice), chicken broth, Cajun seasoning, salt, and black pepper. Bring to a boil.

    Add Rice

    Once boiling, stir in the rice. Reduce heat to low, cover, and simmer for 20-25 minutes or until the rice is cooked and the liquid is absorbed.

    Add Shrimp

    During the last 5 minutes of cooking, add the shrimp to the pot, mixing gently. Cook until shrimp are pink and opaque.

    Remove from heat. Fluff the jambalaya with a fork and garnish with chopped green onions. Serve hot.
