Fried Chicken

Marinate the Chicken
In a large bowl, combine chicken pieces and buttermilk. Cover and refrigerate for at least 2 hours or overnight.

Prepare the Coating
In another bowl, mix flour, cornstarch, salt, black pepper, garlic powder, and onion powder.

Heat the Oil
In a large pot or deep fryer, heat oil over medium-high heat to 180°C (350°F).

Coat the Chicken
Remove chicken from buttermilk, allowing excess to drip off. Dredge each piece in the flour mixture until well coated.

Fry the Chicken
Carefully place chicken in the hot oil and fry in batches for about 12-15 minutes or until golden brown and cooked through. Remove and drain on paper towels.

Drizzle with Chili Oil
Once fried, drizzle Sichuan chili oil over the chicken for added flavor.
Cabbage Slaw

Mix the Slaw Ingredients
In a large bowl, combine shredded cabbage, carrots, and green onions.

Prepare the Dressing
In a small bowl, whisk together rice vinegar, sugar, salt, black pepper, and sesame oil.

Combine and Chill
Pour dressing over the cabbage mixture and toss to combine. Refrigerate for at least 30 minutes before serving.
Comeback Sauce

Mix the Sauce Ingredients
In a bowl, whisk together mayonnaise, ketchup, hot sauce, apple cider vinegar, Worcestershire sauce, garlic powder, and salt until smooth. Refrigerate until ready to serve.
